This February Brisbane’s newest 5-star hotel, dining, and lifestyle destination, Hotel X, will light up the night in the centre of Fortitude Valley – launched by InterContinental Hotels Group (IHG) and Queensland-based developers Pointcorp.
Originally set to launch as Hotel Indigo Brisbane, the highly anticipated Brunswick Street development has evolved to take on a luxurious X-factor, rendering the newly elevated and indulgent identity.
Fashioned in the heart of the Valley, Hotel X’s distinctive design features and premium facilities celebrate the iconic Brisbane neighbourhood through ultra-cool art, Avant Garde lighting and exceptional views of the cityscape.
Hotel X will provide guests an extraordinary cocktail of 24/7 stay and play, featuring a ground floor restaurant and bar, expansive gymnasium, rooftop poolside restaurant and bar with panoramic city views, room service, concierge valet, and an event function space.
Brisbane’s dining scene will be seduced by two new dining destinations housed in the hotel from award winning Ghanem Group - see below one of the new restaurant openings.

The 146-room destination is designed with a contemporary palette and custom furnishings exhibiting showstopping artwork by the distinguished Justin Nicholas, complemented by Dyson and GHD hair appliances in the top-tier rooms, and amenities designed by notorious high fashion icon Karl Lagerfeld – the brand’s first international hotel collaboration to date.

French for ‘kiss kiss’, Bisou Bisou is fashioned on the ground floor of Hotel X and is part of Ghanem Group’s exclusive food and beverage offering for the luxurious new hotel created by IHG Hotels & Resorts (IHG), serving both locals and hotel guests a delectable menu in the heart of Brisbane’s dining scene.
Bisou Bisou’s quintessential French design takes guests on a journey through the streets of Paris – lose yourself in the Aperitivo bar before immersing in the restaurant’s white-washed brick interior, sweeping antique mirrors, warm textures, and moody atmosphere.
Sought-after Head Chef, Anthony Donaldson, has flown the coop from Blackbird Bar & Grill, landing at Bisou Bisou to perfect the menu alongside Executive Chef Jake Nicolson, carefully curating it for the warmer Queensland palate.
“We are adding a modern twist to the traditional and comforting flavours of a French style brasserie,” said Anthony Donaldson.
“The dejeuner (lunch menu) will regularly change, offering a simpler fare as well as an ever-expanding breakfast and dinner offering.
“From classic seafood bouillabaisse with a saffron rouille, whole roasted free-range chicken and confit duck with a suckling pork cassoulet, to delicious hors d’oeuvres and an oyster and caviar bar, guests will also feast their eyes on the freestanding rotisserie featuring locally sourced birds and game.
“One of our hero dishes is the mouth-watering Pomme Aligot, a silky potato puree heavily laden with melted Alpine cheeses originating from the Midi Pyrenees in the South of France.
“Bisou Bisou will also boast an extensive fromage trolly featuring over twenty-five of the best French and Australian cheeses, as well as an indulgent wine menu. Our enomatic wine machine will ensure that every dish is paired with the perfect drop, no matter the vintage or rarity,” he said.
