Sonnel Hospitality announces exciting redevelopment plans for four of its key venues: New Victoria Tavern, Crossroads Hotel, Ashfield Hotel, and Ermington Hotel.
The group’s significant investment marks a bold step forward in Sonnel Hospitality’s mission to create community-first hubs and must-visit lifestyle destinations that offer exceptional food, great drinks, well-designed spaces for families and children to play, function areas, quality accommodation and lively entertainment experiences.
With development applications currently in progress, all four venues will undergo significant upgrades, bringing a new wave of hospitality alongside cutting-edge design to the regions in which they’re located – all of which are experiencing significant population growth.

The redevelopments of all four hotels will focus on elevating every aspect of the guest experience.
Crossroads Hotel in Casula is set to become an even bigger community hub, with a 200-person proposed function centre, a 39-room accommodation offering, a high-energy sports bar, a newly designed bistro, and a stylish cocktail lounge planned. This $34 million redevelopment will transform the venue into a destination in its own right, seamlessly blending hospitality, entertainment, and accommodation through its clever design. Catering to the growing demographic, a large-scale kids' play area alongside a redesigned carpark and landscaping will ensure the venue remains a family-friendly favourite.
At Ashfield Hotel, the redevelopment will strike a balance between preserving the venue’s rich heritage and introducing a vibrant, modern vibe with a sharp focus on shared dining and excellent food offerings. With an open rooftop space, a completely reimagined food and beverage service offering and a lively sports bar, the new-look Ashfield Hotel is slated to play a key role in shaping the suburb’s social and dining culture.
Sonnel Hospitality has impressive redevelopment plans for The Ermington Hotel, which is slated to undergo a major $29 million transformation, redefining it as a true community hub for the area. Plans include building an on-site café and bakery, creating a contemporary bistro, a stylish cocktail lounge, a 40-room accommodation offering, a 200-person function centre, and an expansive kids’ play area. The group is also exploring entertainment-focused elements such as a bowling alley, ensuring the venue delivers a unique and engaging experience for all visitors.
Plans for the New Victoria Tavern in Wetherill Park are more geared towards uplifting the food and beverage offering, with plans to deliver a bold new menu that caters to both casual get-togethers and business meet-ups. Industrial in design but warm in atmosphere, the venue will transform to feature massive sports screens, that will make it a go-to destination in the area for live events.
When it comes to the work that is going on behind the scenes at Sonnel on building out the group’s food and beverage vision, Simon Meers said, “We’ve been working very closely with experts in the field – Justine Baker, Tim Fitzgerald our new Chief Operating Officer, Simon Sandall, Brendon Hill and our venue teams – and we’re focused on creating offerings that reflect modern tastes while staying true to what our locals want. We’ve done this at the Guildford Hotel and most recently at the new-look Marrickville Tavern, which have both been well received by the community.
