The Brisbane City Council has granted DA approval for Stone & Wood's new Brisbane Brewery in the Fortitude Valley set to open this Spring.
In a statement released on the Stone & Wood website, "Setting up our own brewery in Brisbane has been in the works for a while. Within a couple of hours of our original home in Byron, we consider this to be a part of our local area. Queensland’s capital is a thriving cultural city where many of our customers (some of which have been with us from the beginning) and drinkers are."
Located in the heart of The Valley, inside a stunning heritage-listed building, Stone & Wood's Brisbane brewery will be first and foremost a brewery experience and will form part of the precinct’s growing brewery trail.
Alongside the recognisably Stone & Wood interior, merchandise outlet and the working brewery, there’ll be space for community events and training workshops for our trade partners – plus a range of signature Stone & Wood beers on offer.
The brewery will be open until 10.00pm every day to reflect the location’s urban pace.
"It isn’t a pub, a late-night or dedicated music venue; we won’t serve cocktails or spirits, and there’ll be no TVs, pokies or a TAB."
"Ultimately, the brewery will be about drawing drinkers to the Fortitude Valley with something uniquely Stone & Wood. We imagine it to be a place for casual mid-week work drinks, Friday afternoon knock-offs and weekends out in the Valley. We see it, like our brewery in Byron Bay, as a place to slow down and connect."
"We originally hoped to open the brewery earlier, but due to the nature of working with a heritage-listed structure, the opening date was postponed so the building’s owner could undertake rectification work needed to install a working brewery."
