Jesse Kornoff, has been appointed as Hotel General Manager for Adina Apartment Hotel Pentridge Melbourne with oversight across the hotel, events, food and beverage and experience offerings in Melbourne’s newest lifestyle precinct.
Jesse, a former HM Australian General Manager of the Year winner, is passionate about creating authentic and immersive hospitality experiences. With more than 25 years’ experience, he says he was lucky to be trained in ‘the right way’ by a different generation of hoteliers who had spent decades honing their skills in their chosen roles.
During Jesse’s tenure at Mount Lofty House, the property became the most awarded hotel in Australia three years running (2019-2021) and was named Tripadvisor’s #1 hotel in the Pacific (2022). Similarly, under his guidance, Sequoia was named Australian Lodge of the Year in its first year and went on to be named Luxury Accommodation of the Year in the AHA Awards 2022 and Best New Tourism Venture in the SA Tourism Awards 2022.
Kornoff is supported by Alex Bilenki in the EAM role and Samuel Sturrock as Guest Services Manager.
HATTED-CHEF TO FOCUS ON FINE FOOD EXPERIENCES
Head Chef Thomas Woods will lead the kitchen team across the 200-seat North & Common elevated bistro-style restaurant and nearby Olivine wine bar in Pentridge’s B Division. Woods is perhaps best known for his time at the critically acclaimed Woodland House and two-hatted Jacques Reymond in Melbourne.
North & Common is an elevated bistro adjacent to the iconic main gate at Pentridge, while a world-class wine bar, Olivine is located close by in the West Wing of B Division - once home to the likes of infamous Ned Kelly. These two venues join other anchor tenants including Adina Apartment Hotel Pentridge Melbourne (opening February 2023) and Scottish craft beer icon, BrewDog, as part of the billion-dollar transformation of the historic Pentridge site in Melbourne’s north.
A former Good Food Guide Young Chef of the Year and Two Chef Hat winner; Thomas Woods has enjoyed a stellar kitchen career in Victoria from his early days as a young Sous Chef at Jacques Reymond to opening the two-hatted Woodland House and, most recently, working with Martin Benn and Chris Lucas to help open Society Restaurant in Melbourne’s CBD.

NEW SOMMELIER SIGNS ON FOR SERIOUSLY GOOD WINE
One of Australia’s most exciting Sommeliers, Liinaa Berry, has returned to Melbourne to curate an extraordinary wine list that marries small batch Australian producers with rare international varietals at Olivine wine bar. The bar will open in February 2023. After eight years cutting her teeth in the hospitality scene in Melbourne, Liinaa began her wine journey as sommelier for the 5-star hotel group Constance Hotels & Resorts. She worked in both Mauritius and Seychelles at Lemuria Resort which his part of the Leading Hotels of the World. During this time Liinaa was finalist in the Best Sommelier Competition for the Festival Bernard L'Oiseau where she was trained by world class sommeliers like Serge Dubs (Best Sommelier of the World 1989), Andreas Larson (Best Sommelier of the World 2007). Recently, Liinaa was part of the successful pre-opening team for Sequoia, a 5-star luxury lodge, part of the Mount Lofty House boutique hotel in the Adelaide Hills. She brought innovation in the way wine is enjoyed outside of the conventions of restaurant service by re-imagining ways in which food and wine connect people to memorable experiences.
