With more than two decades of experience in luxury hospitality, Ben brings a wealth of leadership and expertise to his new role. His impressive resume includes senior management positions at Sydney’s top five-star hotels, including Sofitel Sydney Wentworth, Fairmont Resort Blue Mountains and, most recently, as General Manager of InterContinental Sydney Double Bay.

The EVE will offer a blend of comfort and style, providing guests a contemporary retreat amidst the bustling city.
Located at the crossroads of Redfern and Surry Hills, Sydney’s newest boutique hotel destination will boast 102 elegantly designed guest rooms; a curated art collection; a landscaped rooftop deck complete with 20-metre swimming pool; a rooftop bar and Mexican restaurant with mezcaleria and poolside dining plus, a lower-level lobby bar operated by The EVE’s F&B Partners, Liquid & Larder (Bistecca, The Gidley, The Rover, Alfie’s).
Emma Soutter, TFE Hotels’ Regional General Manager for NSW/ACT, said the group was confident that, under Mellor’s guidance, The EVE would quickly become a go-to destination for both international travellers and locals, thanks to his deep knowledge of luxury operations and a strong focus on guest satisfaction.

When it opens this summer, The EVE Hotel Sydney will become the contemporary, convivial heart of Wunderlich Lane, home to a collective of restaurants and all-day dining, bars, beauty, wellness, and boutique retail by some of the city’s best operators, in addition to sophisticated event spaces, fresh food village-style markets, creative office spaces and luxurious residences.
The first eagerly awaited hospitality and retail operators begin opening in October and, by the end of the year, the precinct will include two new venues from House Made Hospitality - Island Radio, a restaurant that promises a cacophony of colour, music, and energy, creating a lively dining experience with a menu that draws on the vibrant flavours of Singapore, Indonesia, the Philippines, and Malaysia; and Baptist St. Rec. Club, a neighbourhood cocktail and wine tavern that will revel in the quirky, bizarre, and eccentric spirit of 1980s and ’90s Australia.
Joining them will be Olympus Dining, (a restaurant from the team behind The Apollo and Cho Cho San in Sydney and Greca and Yoko in Brisbane) built for feasting and celebration, with year-round garden dining under an impressive oculus ceiling. A bespoke events space, where visitors to the neighbouring The EVE Hotel and Wunderlich Lane will gather and meet, will be completed in the new year.
